Sauteed Potato,Green Pepper and Eggplant
1 min readThis dish is a traditional dish in northeast China.It is made of potato,green pepper and eggplant,which are quite common in China.
“Saute”is the way we cook it.First,we need to fry the eggplant and potato,then saute these three vegetables together.It’s easy to cook,and you can enjoy three different tastes:melted potato,soft eggplant and crispy pepper.
Today we are to learn how to cook this dish.
200g potato
200g potato
100g green pepper
100g vegetable oi1,5g salt,5g sugar,10g soy sauce,10g crushed shallot,10g crushed garlic,20g cornstarch-water mixture.
Directions:
Peel eggplant and potato,cut them into slanted blocks;clean the pepper and tear it into small pieces.
Pour 90g oil in the frying pan;put potato into the pan when oil gets hot,take it out when it turns golden brown.Put the eggplant in the pan;set aside when it becomes golden brown.
Pour 10g oil in the frying pan,heat,put the shallot and garlic in,stir for a while,put in eggplant,potato and green pepper.
Sift the salt,sugar,soy sauce and cornstarch-water mixture,stir-fry evenly and serve.
