PICKLED CUCUMBER

Preparation time: about 10–15 mins & marinating time.
1 medium-sized cucumber
1 teaspoon salt
1 tablespoon sugar
1 tablespoon red rice vinegar
⅓ teaspoon red chilli oil (optional) a few drops of sesame oil
Split the cucumber, unpeeled, in half lengthwise, scrape off and discard the seeds, then cut across into thick chunks. Sprinkle with the salt and mix thoroughly. Marinate for at least 10 minutes – longer if possible – then pour the juice away. Mix with the sugar, vinegar and red chilli oil (if using). Garnish with sesame oil just before serving.
