8 ‘Duck Pancakes’
about 8 tablespoons sweetened red bean paste
2 tablespoons vegetable oil
granulated or caster sugar to garnish Spread about 1 tablespoon red bean paste evenly over about 85%–90% of the surface of a pancake. Roll the pancake over three or four times to form a flattened roll .
Making the rolls
To cook: Heat the oil in a preheated wok or frying-pan, then shallow-fry the pancake rolls until golden brown on both sides. Cut each roll into 3–4 pieces, garnish with sugar and serve hot.
