Pineapple and Ginger Frozen Treat

A refreshing way to cleanse the palette after a meal, this frozen dessert is creamy and sweet without being cloying — thanks to the zing of the fresh ginger.

Serves 6-8

Ingredients

1 cup sugar

1 ⁄2 cup water

2 cups diced fresh pineapple

1 teaspoon peeled, grated ginger

3 cups milk

1. Bring the sugar and water to a boil, stirring. Add the diced pineapple and ginger. Simmer, uncovered, for 10 minutes.

2. Strain the syrup to remove the ginger and pineapple. Add the milk to the syrup. Freeze. Chill the pineapple.

3. When the mix is partially frozen, stir the chilled pineapple back in. Continue freezing. Thaw slightly before serving.
