1 min readDry ice is great for its theatrical effect.What’s more,drop a tiny bit into a glass of wine and you will really experience the aromas from the drink bubbling up from the glass,to the point that even the novice wine drinker will begin to distinguish ‘notes of apples,ripe fruits and old socks’!However,it can be dangerous if not handled with care,as it is-79C in temperature,which is easily cold enough to give you freeze burns and,if ingested,can freeze bodily liquids on the way down your throat.

INGREDIENTS
25ml sugar syrup(see Chef’s Tip)
50ml oolong tea,chilled
25ml yuzu sake
handful of ice cubes
3g food-grade dry ice
1.Place all the ingredients in a cocktail shaker and shake vigorously.
2.Wearing protective goggles and gloves,place the dry ice in the bottom of a teacup and pour the cocktail over the top.The aromas of the yuzu sake will immediately begin to perfume the air.Be sure to wait until the cocktail has stopped smoking before drinking.
