PEKING’COCKTAIL

Tradition has it that when anyone brought a gift for the Chinese emperor into the Forbidden City，there were two prerequisites:first，it had to be something never seen before in the imperial palace，and second，it had to be the very best.So when it came to designing a cocktail called‘Peking’，it was essential that we took thesefactors into consideration.Finding ingredients totally new to the Forbidden Citywould be difficult in 2015，so instead we focused on using those widely judged to be the most prestigious，namely Champagne，XO Cognac and orange，which signifies prosperity to us Chinese.

Serves 1

INGREDIENTS

8ml orange or blood orange puree

4ml sugar syrup（Chef’s Tip）

50ml Champagne

XO Cognac，placed in a clean perfume atomizer spray bottle

1.Mix the orange puree with the sugar syrup and pour 2 5ml of this into a Champagne flute.

2.Top with the Champagne and then spray some atomized Cognac over the top of the glass before serving.
