CRISPY FIVE-SPICED WHITEBAIT

Serves 4-5
INGREDIENTS
500g whitebait
50ml Shaoxing rice wine
1/2 teaspoon salt
vegetable oil,for deep-frying
50g plain flour
For the five-spice mix
2 teaspoons ground ginger
2 teaspoons garlic powder
2 teaspoons ground coriander
12 teaspoon chilli powder
1/2 teaspoon ground white pepper
1.Combine the whitebait with the wine and salt and leave to marinate in the refrigerator for 30 minutes.
2.For the five-spice mix,simply mix all the ingredients together.
3.Heat the oil for deep-frying in a deep-fat fryer to180℃.4.Drain the whitebait and then pat dry with kitchen paper.
5.Coat the whitebait with the flour and deep-fry,in batches,for about 3-4 minutes until crispy.
6.Remove from the oil and drain well on kitchen paper,then dust with the spice mix and serve immediately.
