1 min readPairing a drink to a dish containing beef,lime,lemon grass,fermented chilli bean paste and mint was always going to be a challenge.Nevertheless,our team came up with a great solution in the shape of this modified mojito.
Serves 1
INGREDIENTS
1 lemon grass stalk,plus extra to garnish
250ml sugar syrup
20g mint,plus extra to garnish
25mllemon juice
25ml white rum
50ml ginger ale
small handful of crushed ice,plus extra to serve
2 teaspoons Champagne
squeeze of lime juice
1.Mash the lemon grass into the sugar syrup with a muddler,transfer to an airtight jar,sealand leave to infuse overnight.
2.Strain 25ml of the lemon grass sugar syrup into a tall glass.Add the mint and pound witha muddler,then add the lemon juice and mix well.
3.Add the rum,ginger ale and crushed ice,then stir gently.
4.Add the Champagne and a squeeze of lime juice,and garnish with lemon grass stalks and extra mint.
