STIR-FRIED GAI LAN WITH DRIED FISH TOASTED PINE NUTS
1 min readI have been eating stir-fried gai lan with garlic and a smothering of oyster sauce for over 30 years now,so it was important for us to offer our guests the opportunity to try this vegetable in a different guise
Serves 2
INGREDIENTS
150g gai lan(chinese broccoli)
1 tablespoon vegetable oil
11/2 tablespoons dried anchovies
1 garlic clove,thinly sliced
1 tablespoon pine nuts
1 teaspoon sesame oil
1 tablespoon Shaoxing rice wine
salt and white pepper
1.Add the gai lan to a pan of boiling water and cook for 3 minutes or until piercing a stem with a knife meets with only a slight resistance
2.Drain and refresh in iced water,then drain again thoroughly and set aside.
3.Add the vegetable oil to a hot wok and lightly fry off the dried anchovies,garlic and pine nuts
4.When you can smell the aroma of the garlic being released in the pan,add the gai lan and heat through
5.Add the wine and season to your liking with salt and pepper
6.Finish the dish with the sesame oil before serving
