TAIWAN COCKTAIL
1 min readEver heard of bubble tea’?Originating from Taiwan,this tea-based drink has large jellies or tapioca pearls suspended within it.This cocktail is a play on three great after-dinner treats:espresso,White Russian and bubble tea
Serves 1
INGREDIENTS
50ml freshly made(i.e.still warm)espresso
25ml sugar syrup
25ml amaretto
8 Rehydrated Tapioca Pearls,to decorate
For the white Russian foam
25ml Kahlua
25ml vodka
25ml double cream
25ml sugar syrup
1 tablespoon milk
5g soya lecithin
1.Mix the espresso,sugar syrup and amaretto together and pour into a cocktail glass
2.For the White Russian foam,warm all the ingredients together gently in a pan.Using a stick blender,blend the mixture until you have a foam,then spoon the foam over the cocktail to serve.Decorate with the tapioca pearls
CHEFS TIP
You can make sugar syrup by heating equal quantities of sugar and water in a pan,stirring until the sugar has dissolved,then boiling until slightly thickened.Leave to cool before using
