Maltodextrin is a very cheffy kind of starch.We use it to turn fats and oils into powders,and you will be amazed how the powder instantly returns to liquid form when it hits your tongue.Once you become confident in using it,start to play around with other oils,fats and caramels-they will all work on the same principle
Makes 140g
INGREDIENTS
100ml sesame oil
40g maltodextrin powder,plus extra if needed
1.Place the ingredients in a blender and blend until a powder forms-you may need to add a little extra maltodextrin powder
2.Store in a sterilized airtight container in a cool,dry place for up to a month
DRIED SHRIMP CHILLI OIL
When i see dried shrimps in a restaurant’s chilli oil,i am reassured that l’m in a place that cares about its ingredients and its guests.It’s the equivalent of going to the restaurant’s bathroom and seeing aloe-vera-coated toilet paper
Makes about 275ml
INGREDIENTS
250ml vegetable oil
1 tablespoon dried shrimps,finely chopped
1 tablespoon chilli paste
1 tablespoon chilli flakes
1.Heat a drizzle of the oil in a pan,add the dried shrimps and lightly fry until fragrant
2.Reduce the heat to low then stir in the chilli paste with 50ml of the oil.Cook slowly until the bright red colour is released from the paste
3.Add the remaining oil and the chilliflakes
4.Continue cooking over a low heat for 10 minutes
5.Leave to cool before using.Store in a sterilized airtight container in a cool,dark place for up to a month
