Green Beans with Garlic and Ginger

500g green beans or Chinese long beans, trimmed
2tablespoons groundnut or vegetable oil
Vateaspoon salt
2 tablespoons finely chopped garlic
1teaspoon peeled and finely chopped fresh root ginger
100ml chicken stock
1teaspoon sugar
2teaspoons sesame oil
This is a superb, quick way to cook green beans. The distinctive zest of garlic and ginger goes wel with the fresh taste and texture of the beans.
1. If you are using Chinese long beans, cut them into 8 cm (4 inch) pieces.
2. Heat a wok until it is hot, then add the groundnut or vegetable oil. When the oil is hot and slightly smoking, add the salt. Then add the garlic and ginger and stir-fry for 10 seconds. Quickly add the beans, stock and sugar and continue to cook for 4 minutes or until the beans are just tender and most of the liquid has evaporated.
3. Stir the sesame oil into the wok and serve the beans at once.
