Beef Fried Rice

250g minced beef
1egg, beaten
1teaspoon sesame oil
3tablespoons groundnut or vegetable oil
2 tablespoons finely chopped garlic
1tablespoon peeled and finely chopped fresh root ginger Plain Boiled Rice, cold
6tablespoons finely chopped spring onions
1teaspoon light soy sauce
1teaspoon dark soy sauce
1teaspoon Shaoxing rice wine or dry sherry
1teaspoon sesame oil
2teaspoon salt
2teaspoon sugar
4teaspoon freshly ground black pepper
An appetizing fried rice variation that draws its flavours from the minced beef. It is easy to make, as well as delicious.
1. Combine the beef with all the marinade ingredients in a bowl.
2. In a small bowl, combine the beaten egg, sesame oil and 1/4 teaspoon salt and set aside.
3. Heat a wok until it is hot, then add the groundnut or vegetable oil. When the oil is hot and slightly smoking, add the garlic and ginger and stir-fry for 1 minute. Then add the beef and stir-fry for 2 minutes. Add the rice and continue to stir-fry for another 3 minutes. Add the egg mixture and stir-fry for another minute.
4.Give the mixture several good stirs to mix well, add the spring onions and stir again to mix well. Add salt to taste. Turn onto a platter and serve at once.
