A Brief Introduction to Ji’an
3 min readJi’ an is located in the center of Jitai Basin. It’s a place with pleasant climate and abundant rainfall. It is rich in local products. Through the ages, it was crowded with merchants all over the country, and was reputed as “the Golden Lulin”and “the place of literature and righteousness”.
Ji’ an, as an ancient cultural city, created a large number of excellences. Took the great writer Ouyang Xiu and the national hero Wen Tianxiang as the representatives of the 2855 Jinshi(successful candidates in the highest imperial examinations) and 18 Zhuangyuan(No.1 Scholars), which painted a beautiful picture of “two premiers at a distance from a river, three champions in five miles”.
Zhou Bida, the famous Prime Minister, litterateur and the first one who successfuly tested the clay print in the Southern Song Dynasty, the patriotic poet Yang Wanli, the Xin style poet Liu Guo; the astronomical scientist Zeng Mingzhan, the agronomist Zeng Anzhi, the editor-in-chief of the Yongle Encyclopedia in the Ming Dynasty Xie Jin, the eminent geographer Luo Hongxian, the science master Luo Yinshun, the financing expert Zhou Chen, the diplomat Chen Cheng, the versatile artist Guo Xu, the farmland human machine inventor Ouyang Bijin, were successively born in this city. With so many heroes making a commitment to this land, it went through wind and storm for thousands of years.
There is picturesque scenery of the endless mountains, the clear water and the flying cloudland, attractive view sights; everyone is amazed at the outlandish flowers, the bright bird singing, as well as the exotic animals. The cloud kissing Mount Wugong, and the Mount Jinggang with the elegance of Mount E’ mei, the peculiarity of Mount Huang, the danger of Mount Hua, and the majesty of Mount Tai, both are famous tourist resorts. Now, with the passing of the Beijing-Kowloon Railway and the crisscrossing of the state road, Ji’ an will be refreshed not only in the image of an old revolutionary base area, but also the deep-rooted traditional conception. The Ji’an special cuisine is mainly the Luling dishes;it is well known for its finely selected materials,daintily stressed knife work,and attentively emphasized cooking.The most specialized cooking methods are roasting,stewing and frying.The Ji’an special cuisine attaches importance on the maintaining of the original taste,highlighting the delicious savor and laying stress on the tasty and refreshing texture with both hot but not greasy.As the selection of raw materials is mostly the local products,it is full of local characteristics.There are many Luling flavor dishes,such as the well-known“Quanfuluanjia”,the”Yongxin dog meat”,the captivating hometown meat,the”Blood duck”,the Wenshan chicken,the nutritious black-bone chicken,and the delicious tender“Wan’an glass fish”and so on,which are delicious regales with great reputation.
