ALMOND CURD WITH FRUIT COCKTAIL

Serves 4.

Preparation & cooking time: about 20 mins & cooling time.

Gelatine powder can be used if you find it too difficult to track down agar- agar or isinglass.

about 10g (¼oz) agar-agar or isinglass

300ml (½ pint) water

4 tablespoons granulated or caster sugar

300ml (½ pint) milk

1 teaspoon almond essence canned mixed fruit cocktail with syrup

Dissolve the agar-agar or isinglass in water over very gentle heat – this will take about 10 minutes. Then add the sugar and milk with the almond essence, mix well and pour the mixture into a large serving bowl. When cool, refrigerate for 3–4 hours to chill and set.

To serve, cut the curd into sugar-lump size cubes, pour the fruit cocktail with syrup over it.
