CHINESE FRUIT SALAD

Chilled fruit (fresh or canned) is most refreshing when served at the end of a big meal, particularly if it is beautifully presented. .
115g (4oz) rock candy or crystal sugar (optional)
300ml (½ pint) water (optional)
1 small water melon or a large honeydew melon
4–5 different fresh and canned fruits, such as lychees, kiwi fruit, pineapple, pears, grapes, cherries, tangerines, banana, peaches, mango and papaya, etc
crushed ice to serve
If no canned fruit with syrup is used, dissolve the rock candy in the water over gentle heat, then leave to cool.
Slice off about 2.5cm (1″) off the top of a melon and scoop out the flesh, discarding the seeds; cut the flesh into small chunks. Prepare other fresh fruits by cutting them into small chunks too.
Fill the melon shell with fruits and the syrup. Cover with clingfilm and chill in the refrigerator for 2–3 hours.
To serve, place the melon on a bed of crushed ice.
