CHOW MEIN (FRIED NOODLES)

Preparation & cooking time: 10–15 mins.
This is a basic recipe for ‘Plain Chow Mein’. For best results, use fresh egg noodles rather than dried ones.
450g (1lb) fresh, or 250g (9oz) dried egg noodles
3–4 tablespoons seasoned oil
1 small onion, finely shredded
115g (4oz) fresh bean sprouts
1–2 spring onions, finely shredded
2 tablespoons light soy sauce pinch of MSG (optional)
a few drops of sesame oil
Cook the dried noodles in salted boiling water according to the instructions on the packet (usually no more than 2–3 minutes), then drain and rinse in cold water; drain again and mix with a little oil. Fresh noodles require far less cooking time – just soak in boiling water for 1 minute, then rinse in cold water and drain; mix with a little of the oil.
Heat the remaining oil in a preheated wok, stir-fry the onion for about 30 seconds, then add the bean sprouts, noodles and spring onions, stir and toss for 1 more minute or so; add the soy sauce and MSG (if using), blend well. Finally add the sesame oil and serve.
