Fried Rice

2eggs, beaten
2 teaspoons sesame oil
1Vateaspoons salt
12tablespoons groundnut or vegetable oil
Plain Boiled Rice, cold
175g cooked ham or lean smoked bacon, diced
6tablespoons finely chopped spring onions
175g fresh bean sprouts
For perfect fried rice, use cold cooked rice, and make sure that the wok is very hot before adding the oil. Add your favourite ingredients or any leftovers.
1. Combine the beaten eggs, sesame oil and 1 teaspoon of the salt and set aside.
2. Heat a wok until it is hot, then add the groundnut or vegetable oil. When the oil is hot and slightly smoking, add the rice and stir-fry for 1 minute. Then add the ham or bacon, spring onions and the remaining salt.
Continue to stir-fry for 3 minutes and then add the egg mixture. Stir-fry for 2 minutes and then add the bean sprouts. Mix well and stir-fry for another 2 minutes or until the bean sprouts are heated through.
3. Turn onto a platter and serve at once.
