2 min readFor obvious reasons, food isn’t one of the main reasons people flock to Huang Shan. All which the food on the mountain has to be carried up by foot, which means food is expensive and variety is limited.
Once you’ve descended the mountain, Anhui cuisine is readily available and delicious.A unique characteristic of Anhui cuisine is the extensive use of mushrooms, bayberries and bamboo, which are all found in the mountainous areas of the province. In general, Anhui dishes tend to be slightly spicy and salty, while preserving most of the original flavor of the ingredients.
Anhui cuisine is also known for its use of wild game (yewei ) such as wild chickens(yeji) and wild rabbits(yet). Huang Shan’s’ bounty includes exotic fruits such as Huang Shan kiwi(huangshan mi houtao), Santan loquats(santan pipa) and Huizhou snow pears(huizhou xueli) A centuries old Huizhou tradition involves serving bawanba (ba wan ba ) made of 16 dishes to mark important occasions.
Some well-known Huizhou dishes includes stinky mandarin fish (chouguiyu which is baked with salted meat, steamed frog with mushrooms and ham(qingzheng shiji), Huizhou hairy tofu(huizhou moddoufu, made from) that are from generation to genkeing she a special recipe passed down aobin delightfully flaky with a vegetable or meat filling.
