Lettuce with Oyster Sauce

750g iceberg lettuce(about 1 head)
1tablespoon groundnut or vegetable oil
1teaspoon sesame oil
3 tablespoons oyster sauce
salt
Oyster sauce,a popular southern Chinese savoury rather than fishy’ seasoning, melds with hot oils to turn common iceberg lettuce into a delicious vegetable main or side dish.
1. Break the head of lettuce in half with your hands, then separate the lettuce leaves and blanch themin a saucepan of salted boiling water for about 30 seconds. Drain them well in a colander.
2. Heat a wok until it is hot, then add the oils. When the oils are hot and slightly smoking, remove the wok from the heat. Arrange the lettuce leaves on a serving platter, drizzle the oyster sauce evenly over the leaves, then add the hot oils over the top-they will sizzle. Mix well and serve immediately.
