This is an easy and foolproof basic rice recipe that always produces excellent results. The required rice is simple long-grain rice, of which there are many varieties.
1. Put the rice into a large bowl and wash it in several changes of water until the water becomes clear(this step may be omitted if you are in a hurry, with no significant adverse consequences). Drain the rice and put it into a heavy saucepan with the water-the water should be 2.5 cm(1 inch) above the surface of the rice; too much water means gummy rice. Bring it to the boil over a high heat and continue boiling until all the surface liquid has evaporated. This should take about 15 minutes. The surface of the rice should have small indentations like pitted craters.
2. At this point, cover the pan with a very tight-fitting lid, reduce the heat as low as possible and let the rice cook undisturbed for 15 minutes-never uncover the pan once the simmering process has begun. Remove from the heat and leave the rice to rest for 5 minutes before serving.
