Sauteed shredded pork in sweet bean sauce is a traditional dish in Beijing,which is cooked by sauce-frying.Sauce-frying refers to a method that covers th ingredients with flour and egg white,then fries to medium well with medium-temperature oi1;then uses sweet fermented flour paste to balance the flavor.This dish is neither too sweet nor too salty,full of sauce aroma,and special in taste.
Recipe
Ingredients:
200g lean pork
Seasoning:
20g vegetable oil,200g shredded shallot,50g sweet fermented flour paste,5g salt,10g cooking wine,20g sugar,one egg,20g flour,20g cornstarch-water mixture.
Directions:
Cut the shallot into slices,put into the plate.Remove the egg white.Chop the pork,add cooking wine,egg white and flour,and toss evenly.
Pour oil into the pan,put pork slices in when the oil gets hot and fry to medium well.
Put sweet fermented flour paste into pan,add salt,sugar,cornstarch-water mixture,and fry.When the sugar melts and the sauce becomes sticky,put in the pork slices and fry.It will be ready when the sauce wraps around the pork.
Put the pork slices into a plate with shredded shallot.
