SHAANXI PROVINCE HONEYCOMB NOODLES
1 min readVery few people know very much about the Shaanxi Province besides the fact thatits capital Xi’an is where the famous terracotta army tombs lie.I would like to think that,after trying this dish,many guests have left my restaurant and GoogledShaanxi’to find out a little more about the area.This is a beautiful-looking dish and,although seemingly simple,it seems to linger in people’s minds.
Serves 5
INGREDIENTS
100g buckwheat flour,plus extra if needed
50ml boiling water
Chili Soy Sauce,garnished with micro coriander,to serve
1.Place the flour in a bowl and,stirring constantly,slowly add the boiling water.The resultant dough should be firm to the touch and free from any lumps.You may need to add a little more
2.Divide the dough into 5g portions and cover with clingfilm.
3.Take one portion of dough and,on a clean work surface,push the dough forwards with your thumb to smear it into a strip 8cm in length.
4.Peel the dough off the work surface and roll it around your forefinger to form a roll.
5.Place the roll upright in a bamboo steamer 5cm in diameter.
6.Repeat the process until the basket is full and the noodles form a honeycomb arrangement.
7.Steam the noodles over a high heat for 6 minutes before serving with the Chilli Soy Sauce for dipping.
CHEF’S TIP
The leftover noodle dough can be frozen for future use.
