Shredded Pork in Bean Paste

500g lean pork, shredded
2 tablespoons groundnut or vegetable oil
2 tablespoons finely chopped garlic
2 tablespoons ground yellow bean sauce
1tablespoon Shaoxing rice wine or dry sherry
1tablespoon hoisin sauce
4whole spring onions,, shredded
2teaspoons dark soy sauce
2teaspoons light soy sauce
2teaspoons Shaoxing rice wine or dry sherry
12teaspoon sugar
1/4teaspoon salt
1teaspoon sesame oil
2teaspoons cornflour
This quick and easy dish shows off the renowned Peking-inspired rich sauce, which is paired with the most popular Chinese meat-pork.
1. Put the pork and all the marinade ingredients in a bowl and mix well.
2. Heat a wok until it is hot, then add the oil. When the oil is hot and slightly smoking, add the pork and stir-fry for 1 minute. Add the garlic, bean sauce and rice wine or sherry and stir-fry for another minute. Then add the hoisin sauce and spring onions and continue to stir-fry for a further minute, mixing well.
3. Turn onto a platter and serve at once, with plain rice and your favourite vegetable dish.
