The Sichuan pepper should prevail here,with this salt giving you a numb tongue in seconds
Makes 150g
INGREDIENTS
100g Sichuan peppercorns
50g salt
1.Heat the Sichuan peppercorns in a wok over a low heat until you begin to smell their aroma
2.Remove from the pan and leave to cool,then grind to a powder using a spice grinder or pestleand mortar Mix with the salt and store in an airtight jar in a cool,dry place for up to a month
FIVE-SPICE SALT
Five-spice powder,made from cinnamon,star anise,Sichuan peppercorns,fennel seeds and ground cloves,is readily available in Chinese supermarkets.When mixed with salt,it makes a wonderful,aromatic seasoning suitable for use in all dishes

50g salt
1.Mix the ingredients together and store in an airtight jar in a cool,dry place,for up to a month
CHEF’S TIP
The only downside to using a ready-made powder for this seasoning is that you have no control over the amount of each of the five spices and you may get the odd batch that has a complete overdose of cloves in,which can ruin your salt!For complete creative control,try grinding your own five-spice mixture
