STEAMED PORK SPARE-RIBS WITH BLACK BEAN SAUCE

Preparation & cooking time: 35–40 mins & marinating time.
A delicious Cantonese dish, and very simple to prepare.

450g (1lb) pork spare-ribs
2 spring onions, cut into short sections, to garnish
For the marinade:
1 teaspoon finely chopped garlic
½ teaspoon finely chopped fresh ginger root
1 teaspoon finely chopped fresh red or green chillies*
2 tablespoons black bean sauce
1 tablespoon light soy sauce
1 tablespoon Chinese rice wine
2 teaspoons cornflour

Chop the spare-ribs into small bite-size pieces, marinate in the marinade for at least 1 hour – the longer the better.
To cook: spread the ribs out on a heat-proof platter, steam in a hot steamer over a high heat for 25–30 minutes. Remove the platter and serve hot with the garnish.
*NB Handle fresh chillies with great care.
