Stir-fried Pork with Bean Sprouts

500g boneless lean pork, shredded
12 tablespoons groundnut or vegetable oil
1tablespoon finely chopped garlic
4spring onions, finely shredded
1red pepper, cored, deseeded and finely shredded
250g fresh bean sprouts
1teaspoon salt
1teaspoon sugar
1tablespoon light soy sauce
2 teaspoons dark soy sauce
1tablespoon Shaoxing rice wine or dry sherry
2teaspoons sesame oil
salt and freshly ground black pepper

1tablespoon light soy sauce
1teaspoon sesame oil
1teaspoon cornflour
At dinnertime in Chinese homes there is almost always at least one pork dish. In this quick and easy home-style recipe it is combined with refreshing bean sprouts.
1. Combine the pork with all the marinade ingredients in a bowl.
2. Heat a wok over a high heat until it is hot, then add the groundnut or vegetable oil. When the oil is hot and slightly smoking, add the pork mixture and stir-fry for 1 minute. Remove the pork with a slotted spoon and set aside in a bowl.
3. Quickly add the garlic to the wok and stir-fry for 10 seconds, then add the spring onions, red pepper and bean sprouts and stir-fry for 10 seconds. Add the salt, sugar, soy sauces and rice wine or sherry and cook for 2 minutes.
4. Return the pork to the wok and stir-fry, mixing well, for another minute. Add the sesame oil and give the mixture another minute to cook or until the pork is heated through. Season to taste with salt and pepper and serve at once, with plain rice and a vegetable dish.
