STIR-FRIED SQUID WITH CHILLI AND BLACK BEAN SAUCE

Preparation & cooking time: 35–40 mins.
350–400g (12–14oz) cleaned squid 1 small onion
1 small green pepper, cored and seeded
3–4 tablespoons seasoned oil
3–4 small bits of fresh ginger root
1 spring onion, cut into short sections
1–2 fresh green chillies, cut into small bits*
2 tablespoons black bean sauce
1 tablespoon Chinese rice wine
a few drops of sesame oil
Prepare and blanch the squid as described on page 82 for Deep-fried Squid.
Cut the onion and green pepper into small triangular pieces. Heat the oil in a preheated wok until smoking, then add the ginger, spring onion and chillies, followed by the onion and green pepper; stir-fry for about 1 minute, then add the black bean sauce, stir for another minute before adding the squid with the wine, and blend well. Finally add the sesame oil and serve hot.
*NB Handle fresh chillies with great care.
