TOFFEE APPLE/BANANA

Apart from apple and banana, other fruits such as pineapple and water chestnuts can be prepared and cooked in the same way.
3 eating apples/4 bananas, peeled
115g (4oz) plain flour
about 100ml (4fl oz) cold water
1 egg, beaten oil for deep-frying
1 tablespoon fresh oil
115g (4oz) granulated or caster sugar
1 teaspoon white sesame seeds (optional)
Cut the apples/bananas into about 16 pieces. Dust the pieces with a little dry flour.
Sift the remaining flour into a mixing bowl, slowly add the water to make a smooth paste, then add the beaten egg, blend well to make a batter.
Dip the apple/banana pieces in the batter and deep-fry in hot oil for about 3 minutes or until golden; remove and drain.
Heat the fresh oil in a preheated wok, add the sugar, stir continuously until the sugar is caramelized, then quickly add the fruit pieces, blending well so that each piece is coated with the ‘toffee’, and add the sesame seeds (if using). Dip the pieces in cold water to harden before serving.
