dishes are dainty with plain and neat ingredients.Besides seasonal vegetables,we usually use bean products,three kinds of mushrooms(champignon,mushroom and straw mushroom)and six kinds of fungus(stone fungus,yellow fungus,Osmanthus fungus,white backside fungus,white fungus and elm fungus).The vegetable material also includes some sea products like seaweed,kelp and sea moss.These ingredients are rich in vitamins,proteins and natural minerals.The vegetable dishes are palatable and refreshing,and are nutritional and conducive to the blood circulation;they are also helpful for reducing cholesterol,cleaning stomach and relieving pain.

To our great surprise,though bean product is the main ingredient in vegetable dishes,the dexterous cooks are still able to make various shapes and tastes of it.

The chicken,fish,and duck in”Vegetarian chicken”,”Sweet and sour carp”and “Roasted duck”are not real.They are actually made from Tofu;yet,people can still taste chicken,duck,fish and meat in them.

The shapes of vegetable dishes are diverse and delicate;they can be vivid animals,and elaborate plants as well;even the plates are beautiful and elegant.

Now you can find vegetable dishes of delicacy in some famous temples in China,such as Shangji Temple in Xian,Qingyun Temple in Guangzhou,Baoguang Temple inChengdu,Jinshan Temple in Zhenjiang,Yufo Temple in Shanghai,Lingyin Temple in Hangzhou and South Potaraka Temple in Xiamen.The vegetable dishes there are well known all over the world,and many people come only to have a taste of them.
